Stir-fried shrimp and tofu with oyster sauce

 


Ingredients (Serves 2)


- 8-10 shrimp


- A pinch of salt


- 1/2 block firm tofu


- 1 tablespoon salad oil


- 1 tablespoon chopped green onion


<Seasonings>


- 1 tablespoon sake


- 1 teaspoon sugar


- 1 tablespoon oyster sauce


<Egg mixture>


- 1 beaten egg


- A pinch of salt


<Directions>


1. Shell and devein the shrimp, rinse, and rub in a pinch of salt. Wrap the firm tofu in kitchen paper and drain. Mix the ingredients for the <Seasonings> and <Egg mixture> separately.

2. Heat salad oil in a frying pan and fry the shrimp. Once cooked, add the firm tofu broken into bite-sized pieces and stir-fry, then add the <seasonings> and stir-fry.

3. Add the <egg mixture> and stir-fry until half-cooked, then transfer to a serving dish and sprinkle with chopped spring onions.
