[Ingredients for 2 servings]
- 1/2 bitter melon
- 100-120g shredded pork
- 2 servings of Chinese noodles (for yakisoba)
- 1/4 carrot
- 1/2 pack shimeji mushrooms
- 2 teaspoons salad oil
- 2 teaspoons sesame oil
<Seasonings>
- 1 tablespoon Shaoxing wine
- 1 tablespoon oyster sauce
- 1/2 teaspoon sugar
- 1 teaspoon soup stock powder
- 1.5 teaspoons soy sauce
[Preparation]
- Remove the seeds and pulp from the bitter melon with a spoon and thinly slice crosswise.
Peel the carrots and cut them into half-moon slices.
Cut off the stems of the shimeji mushrooms and separate them into small clusters.
[Directions]
1. Heat a frying pan over high heat, add salad oil, and add the Chinese noodles, breaking them up as you go. Cook until golden brown, then flip them over and remove from the frying pan.
2. Heat sesame oil in a frying pan, and fry the pork until it changes color. Add the bitter melon, carrots, and shimeji mushrooms and stir-fry.
3. Once the bitter melon and carrots are soft, add the seasonings and mix well. Add the Chinese noodles once they're thoroughly mixed. Stir-fry briefly, season with salt and pepper, and serve.
