Ingredients
- 1 radish
- Mentsuyu : Seasoned vinegar (easy vinegar): 2:1 ratio
- 3 packs of bonito flakes
- A few slices of red chili pepper
My method
I peeled the radish, sliced it into 1cm rounds, and then cut it into strips.
Put the daikon radish into a storage bag, add the mentsuyu and vinegar, and knead well. I used 300cc of mentsuyu and 150cc of vinegar per daikon radish.
I also added the red chili pepper and left it flat in the refrigerator overnight.
This much water came out overnight.
I added 3 packs of bonito flakes!
I also chopped the green stems of the radish leaves and added them! I kneaded well to mix everything together before serving.
