Ingredients:
2 eggplants
[A] 2 tablespoons mentsuyu (3x concentrated)
[A] 2 teaspoons white sesame seeds
[A] 1 teaspoon grated garlic
[A] 1 teaspoon sesame oil
50g breadcrumbs
5 tablespoons salad oil
Directions:
1. Remove the eggplants' calyx and peel them with a peeler. Wrap them in plastic wrap, place them on a heat-resistant plate, and microwave at 600W for 2 minutes.
2. Remove to a cutting board, cover with plastic wrap, and flatten with a rolling pin. Place in a plastic bag along with [A] and knead well. Sprinkle with breadcrumbs, pressing them in.
3. Add salad oil to a frying pan and heat over medium heat. Place the eggplants on top of the dish and fry until golden brown on both sides. Finish!
Serve with chopped parsley, if desired!
