Crispy and chewy potatoes that aren't fried.

 


Ingredients

Potatoes: appropriate amount

Olive oil: appropriate amount

Salt: appropriate amount

Black pepper: appropriate amount

[Instructions]

(1) Wash the potatoes well and wrap them in plastic wrap.



(2) Place them in a heat-resistant container and heat each potato in a 600W microwave for 3 minutes. They are done when a bamboo skewer can easily pierce them.

(3) Line a baking sheet with parchment paper and arrange the potatoes on it. Wrap the bottom of a glass or similar container with plastic wrap and mash the potatoes. If the potatoes are large, it is recommended to cut them in half first.



(4) Drizzle olive oil over the potatoes, then sprinkle with salt and black pepper.




(5) Bake in a preheated oven at 250℃ for about 30 minutes. Done!




Avocado and egg salad

 


Ingredients (for 2 servings)

Avocado...1

Boiled eggs...2

A

Mayonnaise...2 tablespoons

Soy sauce...1 teaspoon

Wasabi...to taste


Preparation

Peel the avocado and remove the pit.

Make soft-boiled eggs.


Instructions

1. In a bowl, combine the avocado, boiled eggs, and A.

Mix while breaking up the boiled eggs.

Broccoli and egg salad with oyster sauce and mayonnaise

 


Ingredients (2-3 servings)

• Broccoli: 1 head (250g)

• Hard-boiled eggs: 2

• Crab sticks: 70g

(A)

• Mayonnaise: 3 tablespoons

• Oyster sauce: 2 teaspoons

• Grated garlic: 1/2 teaspoon

• Ground white sesame seeds: 1 tablespoon

• Coarsely ground black pepper: to taste

■Preparation

• Make hard-boiled eggs. (Boiling in water for 6 minutes and 30 seconds after boiling is recommended.)

■Instructions

① Separate the broccoli into florets, peel the thicker parts of the stems, and cut them into half-moon shapes.

② Arrange in a frying pan, add 3 tablespoons of water and a pinch of salt, cover, and heat. Once boiling, reduce heat to medium and cook for 2 minutes and 30 seconds.

③ Remove the lid, let the water evaporate, then spread on a sieve to cool completely.

④ Mix (A) in a bowl. Cut the hard-boiled egg into four pieces. Shred the imitation crab meat by hand.

⑤ Add the broccoli and imitation crab meat to the bowl with the sauce and mix.

⑤ Finally, add the hard-boiled egg and mix gently so as not to break it apart. Done!


💡 The absolute rule for deliciousness:

Instead of "boiling" the broccoli, "steam-fry it in a small amount of water."


This concentrates the flavor and prevents it from becoming watery, allowing the rich oyster sauce and mayonnaise sauce to coat it perfectly!


✨ Delicious Point (Even more delicious!):

Sprinkle plenty of "extra black pepper" just before serving to enhance the flavor and make it a perfect snack to go with drinks.

Grilled Fish with Fruit Salsa

 


 Ingredients

5 large fish fillets,

Dressing ingredients:  1/2 cup olive oil, 2 tablespoons lemon juice, 1 tablespoon minced garlic, 1 teaspoon black pepper powder, chopped parsley, Italian herbs and salt to taste.


Salsa ingredients: ½ cup ripe mango (cut into small cubes), 2 tablespoons capsicum (cut into cubes), 1 onion (cut into cubes) and chopped coriander leaves to taste.


Method: 

Wash the fish fillets very well and dry them with a kitchen towel. Now mix all the dressing ingredients very well and marinate the fish with half of it for 1 hour. Spray a little oil in a pan spread on the stove. Grill the marinated fish in it for 5 minutes on medium heat, turning it over.


Mix all the salsa ingredients with the remaining half of the dressing. Serve the grilled fish with the salsa on the side.

Teriyaki chicken breast with mayonnaise

 



Ingredients:


Chicken breast: 1 piece (300g-350g)


[A] Mayonnaise: 1 tbsp


[A] Grated garlic: 1/2 tsp


Cornstarch: appropriate amount


Vegetable oil: 1 tbsp


[B] Soy sauce: 2 tbsp


[B] Sake: 1 tbsp


[B] Mirin: 1 tbsp


[B] Sugar: 1 tbsp


Instructions:


① Place the chicken breast cut into bite-sized pieces and [A] in a plastic bag and massage. Let it sit for 15 minutes, then coat with cornstarch.


② Heat vegetable oil in a frying pan over medium heat, and arrange the chicken from ① in the pan and cook.


③ Once both sides are golden brown, wipe off any excess oil. Add [B] and simmer until the sauce thickens. Done!


Serve with mayonnaise to taste!

Crab stick and bean sprout salad with shiso dressing

 


[Ingredients and Instructions] (Serves 1)


1. Place 80g of bean sprouts in a heatproof bowl, cover with plastic wrap, and microwave at 600W for 1 minute. Let cool slightly and pat dry. Roughly shred 2 crab sticks (approx. 30g).


2. In a separate bowl, mix 1 teaspoon each of shiso-flavored seasoning and olive oil, and 1/2 teaspoon of vinegar. Add the bean sprouts and mashed crab sticks and mix well.

Eggplant ratatouille style

 


[Ingredients and Instructions] (Serves 1)


1. Peel one large eggplant (approx. 100g) in stripes using a vegetable peeler, then slice into 1cm thick rounds. Sprinkle with a little salt, coat with 1 teaspoon of flour, and place in a heatproof bowl.


2. Add 1 tablespoon each of tomato ketchup and grated cheese, 1 teaspoon of olive oil, and a little dried mixed herbs (if available), and mix well. Microwave at 600W for 2 minutes and 30 seconds without covering, then stir.

Snack chicken

 


Ingredients (for 2 servings)


8 chicken drumsticks

1 tablespoon sugar

1 1/2 tablespoons soy sauce

1 tablespoon sake

1/2 teaspoon salt

1/2 teaspoon coarsely ground black pepper

1/2 teaspoon grated garlic

1/4 teaspoon (2 cm if using a tube)

2 lemon wedges



How to make the chicken snack


① Pierce the drumsticks all over with a fork.

② Put the sugar, soy sauce, sake, salt, black pepper, and grated garlic into a plastic bag and mix well.

③ Add the drumsticks and massage them in, then refrigerate for at least 1 hour.


*It's best to use a double bag to prevent the seasonings from leaking.

④ Place the chicken and marinade from step ③ into a heatproof bowl, cover loosely with plastic wrap, and heat in a 600W microwave for 5 minutes. ⑤ Remove the chicken drumsticks from the bowl, coat them well with the sauce, and place them on a plate lined with aluminum foil. Bake in a toaster oven for about 10 minutes, or until golden brown.


*Adjust the baking time as needed while checking on them.


⑥ Serve on a plate and garnish with lemon if desired.


They turned out beautifully golden brown and delicious! The sweet and savory flavor is so appetizing, you could eat them all! Adding lemon makes them refreshing and even more delicious.

Crispy Chicken Breast

 


Ingredients (for 3 servings):


3 chicken tenderloins

2 tablespoons oyster sauce

Cornstarch (as needed)

4 tablespoons vegetable oil


Instructions:


 ① Place plastic wrap over the chicken tenderloins and flatten them with a rolling pin or similar tool.




② Place the chicken and oyster sauce in a bowl and mix well.



③ Heat the vegetable oil in a frying pan over medium heat. Add the chicken coated with cornstarch and cook until crispy. Done!



A delicious beef steak and avocado salad

 


[Ingredients for 2 servings]


* Beef steak: 250g


* Avocado: 1


* Mizuna (Japanese mustard greens): 3 stalks


* Red onion: 1/8


* Cherry tomatoes: 4


* Green beans: 5


* Baby corn: 3


* Salt and pepper: to taste

* Olive oil: 2 tablespoons


* Lemon juice: 1 tablespoon


* Soy sauce: 2 teaspoons


* Mustard: 1/2 teaspoon

[Preparation]


* Remove the pit from the avocado and cut into bite-sized pieces. Slice the red onion thinly along the grain and soak in water. Drain and combine with the mizuna.

Cut the cherry tomatoes, baby corn, and green beans in half.

Honey mustard pumpkin

 


[Ingredients and Instructions] (Serves 2)


1. Peel 1/8 of a pumpkin (approx. 200g) in places and cut into 1.5cm cubes. Briefly rinse in water, place in a heatproof bowl, cover with plastic wrap, and microwave at 600W for 2 minutes 30 seconds to 3 minutes. Remove the plastic wrap, let it cool slightly, and drain.


2. In a separate bowl, mix 1 1/2 teaspoons honey, 2 teaspoons mayonnaise, 1/2 teaspoon whole grain mustard, and a pinch of salt. Add the pumpkin cubes from step 1 and mix well.

This time, I 'll introduce a "Tiramisu-Style Dalgona Parfait" that's easy to make even when you're tired. Let's get started!

Jumping on the bandwagon

First, 

let's make "Dalgona Coffee," which originated in Korea and became a hot topic.


Simply mix sugar, instant coffee, and water with a hand mixer.


It's ready when it's nicely foamed up and fluffy.



Miracle Tiramisu

Next up, an easy-to-make "mock tiramisu"


The ingredients are just three: pudding, unsweetened yogurt, and whipped cream. Simply mix these together, and you'll get a surprisingly tiramisu-like flavor.



Using cookies

Put cream-filled cocoa cookies in a plastic bag and crush them with a rolling pin. Placing the bag between towels while crushing will prevent it from tearing.


Toppings

Now let's assemble it.


In a glass, layer the pudding, then the cookies, then the pudding, then the cookies, then the Dalgona coffee, and finally sprinkle with unsweetened cocoa powder.


To make the layers look nice, the key is to arrange the ingredients along the sides of the glass. For Dalgona coffee, instead of moving the spoon, rotate the glass to create a beautiful presentation.

Lettuce: 1/2 head

Canned tuna (in oil): 1 can (70g)

Crispy fried chicken thighs, ready to make in just one frying pan.

 Chicken thigh with green onion sauce




[Ingredients (for 2 servings)]


2 chicken thighs

1/2 leek (approx. 50g)

Leaf lettuce (appropriate amount)

Cherry tomatoes (appropriate amount)

1/2 teaspoon salt

1 teaspoon sesame oil

A [1 tablespoon soy sauce, 1/2 tablespoon vinegar, 1 teaspoon sugar, 1 teaspoon sesame oil, 1/2 teaspoon grated ginger]


[Instructions]

(1) Remove excess fat from the chicken thighs and cut into bite-sized pieces (for deep-frying). Pat dry thoroughly with paper towels and sprinkle salt on the flesh side. Finely chop the leek.

(2) Mix the chopped leek and A to make the leek sauce.



(3) Heat the sesame oil in a frying pan over medium heat and arrange the chicken pieces skin-side down, making sure they do not overlap. Place over medium heat, press down while cooking, and when the skin side is browned, flip and cook the other side until cooked through.




(4) Place in a bowl, garnish with leaf lettuce and cherry tomatoes, and pour the green onion sauce over it.
