* Bitter melon: 1/2 (cut in half horizontally)
* Frying oil: appropriate amount
* Cherry tomatoes: 2-4
* Salt: appropriate amount
<Batter>
* Flour: 1/3 cup
* Quail eggs: 2
* Cold water: 3-4 tablespoons
[Preparation]
* Slice the bitter melon into 5mm thick rounds and remove the seeds and pith.
* In a bowl, mix the quail eggs and cold water for the batter. Sift in the flour through a sieve and mix quickly until the flour is roughly incorporated and some flour remains.
* Begin preheating the frying oil to 170°C.

1. Lightly coat the bitter melon slices with extra flour (not included in the ingredients list), dip in the batter, and deep-fry in 170°C oil. Drain the oil, arrange on a plate, and garnish with cherry tomatoes and salt.
