Wrap sandwich

 


[Ingredients for 6 servings]

* Frying oil: appropriate amount


<Dough>


* Strong flour: 200g


* Water: 100ml


* Salt: 1/4 teaspoon


* Extra virgin olive oil: 2 tablespoons


<Filling>


* Salmon (fillet): 150g


* Salt and pepper: a pinch


* Lettuce: appropriate amount


<Coating>


* Flour: 2 tablespoons


* Egg: 1/2


* Breadcrumbs: 1 cup


<Sauce>


* Mayonnaise: 4 tablespoons


* Ketchup: 4 teaspoons


* Milk: 4 teaspoons


[Preparation]


* Heat the water for the dough in the microwave for 30 seconds, then add the salt and dissolve. (Hint: I used a 600W microwave.)


* Mix together the ingredients for the sauce.


[Instructions]


1. Measure the bread flour into a bowl, add water, and mix with a wooden spatula.

2. Add the extra virgin olive oil and mix well. Transfer to a work surface and knead by hand for about 2 minutes.

3. Once the dough comes together, roll it into a ball, wrap it in plastic wrap, and let it rest at room temperature for 30 minutes.

4. Divide the dough into 6 portions and roll each into a 20cm circle using a rolling pin.

5. Heat a frying pan without oil and cook both sides until golden brown (about 2 minutes per side over medium heat).

6. Prepare the filling. Cut the salmon into strips and season with salt and pepper. Coat the salmon in flour, egg, and breadcrumbs in that order, and deep-fry in 180°C oil until golden brown.

7. Once the dough has cooled slightly, place the filling on top, pour the sauce over it, and roll it up.
