Ingredients (Serves 2 cups of rice)
- 2 cups of rice
- 250g edamame beans
- 2 pieces of dashi kombu (kelp) (5 x 10cm)
- 1 tablespoon salt
- 300ml water
- A few toasted sesame seeds
Directions
1) Rub the edamame beans with salt thoroughly and rinse them with water, leaving the skins on. Place the rice, washed edamame beans, and dashi kombu in a rice cooker and cook using the takikomi setting.
2) Once cooked, remove the edamame and dashi konbu. Remove the edamame beans from the pods. Slice the dashi konbu into thin strips with kitchen scissors and return it to the rice cooker along with the edamame, then mix with the rice.
3) Serve in bowls and sprinkle with toasted sesame seeds.
