Stir-fried Green Peppers and Ground Meat with Fluffy Eggs in Oyster Sauce

 


Ingredients (Serves 2)

4 green bell peppers


150g mixed ground meat (beef and pork)


2 eggs


A pinch of salt


1 tbsp vegetable oil


[A] 1 tbsp oyster sauce


[A] 1 tbsp soy sauce


[A] 1 tbsp sake


[A] 1 tsp sugar


[A] 1/2 tsp chicken stock granules


[A] 1/2 tsp grated garlic


Instructions

① Cut the green peppers in half lengthwise, remove the stems and seeds, and slice them lengthwise into strips 5–7mm wide. Crack the eggs into a bowl, add the salt, and beat thoroughly with cooking chopsticks until the egg whites are fully incorporated and the mixture is uniform.


② Add half the vegetable oil to a frying pan and heat over medium heat for about 30 seconds, then pour in the egg mixture all at once. Once the edges begin to set, use a spatula to give it a few large stirs and cook for another 30–40 seconds. Remove the eggs to a plate while the surface is still slightly runny (soft-scrambled).


③ Add the remaining vegetable oil to the same pan, heat over medium heat, and add the mixed ground meat. Let the meat sear without moving it much for the first minute to develop some color, then break it up with a spatula and stir-fry for 2–3 minutes until the meat is mostly cooked through (no longer pink). Add the green peppers and stir-fry over medium-high heat for about 2 minutes, until they turn a vibrant green and soften slightly.


④ Pour in the [A] mixture (which has been stirred well to ensure no lumps remain) and stir-fry over medium-high heat for 30 seconds to 1 minute, until the liquid reduces and the meat and peppers become glossy. Return the cooked eggs to the pan and quickly toss 3–4 times with the spatula, breaking the eggs up into large chunks as you mix. It's ready to serve!
