Sweet potato pie made with sandwich bread

Ingredients (makes 4)

Sweet potato: 100g

[A] Milk: 1 tbsp

[A] Sugar: 1 tsp

[A] Toasted black sesame seeds: 1/2 tsp

Sliced bread (8-slice loaf): 4 slices

Butter: 10g

Instructions

① Peel the sweet potato and cut it into bite-sized pieces. Soak in water for 2–3 minutes, drain well, and place in a heatproof bowl. Cover loosely with plastic wrap and heat in a 600W microwave for 3 minutes.

② Add the ingredients in [A] and mash with a fork (or similar tool) until smooth.

③ Trim the crusts off the bread slices and flatten them using a rolling pin. Place one-quarter of the mixture from step ② onto each slice, fold in half, and press the edges firmly shut using a fork. Repeat to make 4 in total.

④ Heat the butter in a frying pan over medium heat. Once the butter has melted, add the prepared bread pockets. Cook over medium-low heat until both sides are golden brown—and you’re done!
