Bacon wrapped enoki mushrooms

 

[Ingredients] (Serves 2)


1/2 bag of enoki mushrooms

3 slices of bacon

A little pepper

4 florets of broccoli

2 slices of lemon (sliced ​​into wedges)

[Preparation]


1. Cut off the stems of the enoki mushrooms and cut them into 6 equal parts.

If you cut off too much of the stems, the enoki mushrooms will fall apart, so be careful to keep the roots attached.

2. Cut the bacon in half lengthwise.

3. Divide the broccoli into small florets, boil in hot water and drain in a colander.

【How to make】


1. Place the bacon on a cutting board, place the enoki mushrooms on top and sprinkle pepper on top. Wrap the enoki mushrooms in the bacon and secure the end with a toothpick.


2. Place (1) in a non-fluororesin coated frying pan and heat over medium heat. Once the bacon has browned, flip it over and cook the other side until browned. Arrange on a plate with the broccoli and garnish with lemon.

If using a non-fluororesin coated frying pan, lightly coat with salad oil.
