Ingredients
- 1/2 bitter melon (halved lengthwise)
- Oil for frying, to taste
- Cherry tomatoes, 2-4
- Salt, to taste
<Batter>
- 1/3 cup flour
- 2 quail eggs
- 3-4 tablespoons cold water
<Preparation>
- Slice the bitter melon into 5mm slices and remove the seeds and pulp.
- Combine the quail eggs and cold water for the batter in a bowl, sift through a sieve, and add the flour. Mix quickly until just a few loose flour particles remain.
- Preheat the frying oil to 170°C.

1. Lightly coat the bitter melon with flour (not included in the recipe), then dunk it in the batter and deep fry in 170°C oil. Drain and serve in a serving dish, garnish with cherry tomatoes and salt.
