Shrimp and avocado soba noodles in tomato broth

 

Ingredients (Serves 2)

Shrimp... 12 small


[A]


Garlic (minced)... 1/4 clove


Salt and pepper... A pinch each


Olive oil... 2 teaspoons


[B]


Dashi... 2 cups


Soy sauce... 2.5 tablespoons


Mirin... a little over 1 tablespoon


Avocado, tomato... 1 small each


Vinegar... 2 teaspoons


Chimi pepper... A pinch


Boiled soba noodles... 2 bags


Shredded green shiso leaves... 4 leaves


Directions

❶ Peel and devein the shrimp, wash, drain, and combine with [A]. Heat a frying pan over medium heat, add the olive oil, and fry the shrimp until cooked through.


❷ Add [B] to a pot, bring to a boil, and allow to cool.


❸ Score the avocado, split it, remove the seed, peel it, and slice it into thin half-moon shapes.


❹ Remove the stem from the tomato, dice it, and add it to ②, then add the vinegar and chili pepper and mix.


❺ Boil the soba noodles, rinse them, and drain thoroughly. Transfer to a bowl, top with the avocado, ①, and green shiso leaves, and pour over ④.
