Tarator, a refreshing soup made with yogurt and cucumber

 

Ingredients & Quantities

1/2 cucumber

150g unsweetened yogurt

2 teaspoons olive oil

100ml milk

30g nuts (walnuts today)

1/4 teaspoon grated garlic (to taste, or powder)

(A) 100ml hot water

(A) 1/2 teaspoon consommé

For topping: olive oil, paprika powder, coarsely ground pepper, herbs, lemon zest, to taste


Preparation/Procedure

Finely chop the cucumber and nuts. Place the ingredients in (A) in a bowl and dissolve the consommé thoroughly.

Put all ingredients in a bowl and mix well, then season with salt and pepper and serve.

Garnish with olive oil, paprika powder, coarsely ground pepper, herbs, and lemon zest to finish. It's recommended to add plenty of herbs to the soup (dried herbs are fine too).
