Ingredients
New potatoes...2 (250-280g)
Anchovies...3 (10g)
Olive oil...2 tablespoons
Grated garlic...1 teaspoon
Grated cheese...2 tablespoons
Italian parsley (dried is okay)...as needed
How to make
1. Wash new potatoes thoroughly and cut them into bite-sized pieces with the skin on. Place them in a heat-resistant bowl, cover with plastic wrap, and microwave at 600W for about 5 minutes.
2. Heat olive oil and minced garlic in a frying pan, add 1 (drained thoroughly) and fry until crispy.
3. Add finely chopped anchovies to step 2 and fry further, then add grated cheese and bake until crispy.
4. Place in serving bowls and sprinkle with chopped Italian parsley.
