Ingredients (Serves 2–3)
1/4 pumpkin
1/2 onion
400ml water
1/2 tsp salt
[A] 70ml milk
[A] 1 tsp consommé granules
[A] Pepper (to taste)
Instructions
① Peel the pumpkin and cut it into 2–3 cm cubes. Peel the onion and slice it thinly.
② Place the pumpkin, onion, water, and salt in a pot and heat over medium heat. Once it boils, reduce the heat to low and simmer for about 10 minutes until the pumpkin is tender.
③ Let the mixture cool slightly, then transfer it—including the cooking liquid—to a blender and blend until smooth.
④ Return the mixture to the pot, add ingredients [A], and heat over medium heat. Stir while warming it through, being careful not to let it boil. It’s ready to serve!
Sprinkle with dried parsley before eating, if desired.
