Ingredients (Serves 2)
Okra: 8 pods
Salt: 1/4 tsp
Crab-flavored fish sticks (kanikama): 6 sticks
Hard-boiled eggs: 2
[A] Mayonnaise: 1 tbsp
[A] Soy sauce: 1 tsp
[A] Sesame oil: 1 tsp
[A] White sesame seeds: 1 tsp
[A] Chicken stock granules: 1/2 tsp
[A] Dried bonito flakes: 2g
Instructions
① Remove the stems and calyxes (tough caps) from the okra, sprinkle with salt, and rub them against the cutting board (to soften the texture and remove fuzz). Rinse with water, pat dry, and prick a few holes in each pod with a toothpick.
② Place the okra in a heat-resistant bowl, cover loosely with plastic wrap, and microwave at 600W for 2 minutes and 30 seconds. Once cooled slightly, cut each pod in half diagonally.
③ Shred the crab-flavored fish sticks by hand and coarsely break up the hard-boiled eggs.
④ Combine the okra (from step ②), fish sticks, eggs, and ingredients [A] in a bowl; toss gently to mix, and it's ready!
