Ingredients
・Chicken thigh…1 piece (300g)
・A Shio-koji (salted rice malt)…1 tbsp
・A Mayonnaise…1/2 tbsp
・A Garlic…1 clove
・A Salt…A pinch
・Potato starch…5–6 tbsp
・Aonori (dried green seaweed)…1 1/2 tsp
・Vegetable oil…1 tbsp
Preparation
・Grate the garlic.
Instructions
1. Cut the chicken thigh into strips about 3cm wide, then use kitchen shears to cut them into smaller, bite-sized pieces.
2. Place the chicken and ingredients A into a plastic bag and massage well to combine.
3. In a separate plastic bag, combine the potato starch, the chicken, and 1 teaspoon of aonori; shake the bag vigorously to coat the chicken evenly with the starch mixture.
4. Heat the vegetable oil in a frying pan and arrange the chicken pieces in the pan. Cook over medium-low heat until golden brown, then flip them over.
Once the sides are cooked, shake the pan while cooking the chicken until crispy all over. Finally, sprinkle with the remaining 1/2 teaspoon of aonori and a pinch of salt (not listed in the ingredients) to finish!
