Cauliflower soup

 


Ingredients (Serves 2)


4-5 cauliflower florets (100g)


1/4 onion


1/2 teaspoon garlic (grated)


A pinch of salt


1 tablespoon olive oil


400ml water


1.5 teaspoons soup stock powder


A pinch of nutmeg


Cracked black pepper to taste


Preparation:


Cut the cauliflower into small florets and slice them into 1cm thick pieces. Cut the onion into 1cm cubes.


Directions:


1. Add the olive oil, onion, and garlic to a small pot and sauté over medium heat. Once the onion is translucent, add the cauliflower, sprinkle with a pinch of salt, and continue sautéing.

2. Add the water, soup stock powder, and nutmeg, cover, bring to a boil, then reduce the heat and simmer for 4-5 minutes. Pour into serving bowls and sprinkle with cracked black pepper.
