Radish and apple pickled in apple juice

 


Ingredients (serves 2-3):


1/2 daikon radish


1/2 teaspoon salt


1 apple


1 lemon


100ml apple juice


Directions:


1. Peel the daikon radish and cut into 1cm cubes. Finely chop the leaves. Rub in salt and let sit for 10 minutes, then squeeze out the excess water and place in a bowl.


2. Wash the apple thoroughly, remove the core, cut into 3mm chunks, and place in another heat-resistant bowl. Cover with plastic wrap and microwave for 2 minutes at 600W.


3. Wash the lemon thoroughly, squeeze out the juice, and shred half the peel. Add the lemon and 2. to 1. and pour in the apple juice. Let sit in the refrigerator for about 15 minutes and it's ready!
