Ingredients (Serves 2)
200g chicken thighs
A pinch of salt
1/2 tablespoon olive oil
100g steamed soybeans
1/2 onion
10 cherry tomatoes
A [5-6 sprigs of herbs such as thyme or oregano (dried is fine, but use as needed), 1 bay leaf, 1 clove garlic, 1/2 teaspoon salt, a pinch of pepper, 200ml water]
Directions
1. Cut the onion into 1cm pieces. Cut the garlic in half.
2. Cut the chicken into bite-sized pieces and sprinkle with salt.
3. Heat olive oil in a pot over medium heat. Add the chicken and sear. Once the chicken changes color, add A, the steamed soybeans, onions, and cherry tomatoes, increase the heat, bring to a boil, then cover and simmer over low heat for 10 minutes.
