Oven baked mackerel and potatoes

 


[Ingredients for 2 servings]


- 1/2 mackerel (filleted)


- 2 potatoes


<Sauce>


- 3 tablespoons mayonnaise


- 1 teaspoon whole grain mustard


- 1 teaspoon lemon juice


- A pinch of pepper


- A pinch of dried parsley


[Preparation]


- Remove the bones from the mackerel and slice into 7-8mm strips.

- Rinse the potatoes thoroughly with water, skin on. Wrap them in plastic wrap while still wet and microwave for 5-6 minutes (turning halfway through) until a toothpick can be inserted easily. I use a 600W microwave.


- Mix the <Sauce> ingredients together.


- Preheat the oven to 200°C.


[Directions]


1. Peel the potatoes while they are still hot and cut them into 1cm thick slices.

2. Place the mackerel and potatoes on a heat-resistant plate, pour the sauce over them, and bake in a preheated oven at 200°C for 10-12 minutes.
