Pickled cauliflower

 


Ingredients (Serves 2)


- 8-10 cauliflower florets


<Marinade>


- 50ml apple cider vinegar


- 100ml water


- 20g sugar


- 1/2 teaspoon salt


- 1/2 garlic clove, thinly sliced


- 1 bay leaf


- 1 red chili pepper, minced


<Directions>


1. Place the <Marinade> ingredients in a small pot and bring to a boil. Once boiling, turn off the heat and let cool.

2. Boil the cauliflower in plenty of boiling water until firm, then drain in a colander. While still hot, marinate in the <Marinade>. Once cooled, place in the refrigerator to chill, and serve immediately.
