Ingredients (Serves 2)
2 slices of bacon
1/2 bunch spinach
A pinch of salt and pepper
Egg Mix
2 beaten eggs
A pinch of salt
1 tablespoon milk
10g butter
Preparation
Cut the bacon into 2cm pieces. Cut the roots of the spinach and cut them into 4cm pieces. Mix the ingredients for the egg mix.
Directions
1. Heat half the butter in a frying pan over medium heat. Once melted, pour in the egg mix and fry. Remove from heat once the mixture is half-cooked.
2. Add the remaining butter to the frying pan and fry the spinach and bacon over medium heat. Add (1) back in, season with salt and pepper, and serve.
