Grilled Chicken with Mustard Mayonnaise

 


Ingredients 

1 large chicken thigh (350g)

Salt to taste

Pepper to taste

2 tablespoons mayonnaise

2 tablespoons mirin

1 tablespoon soy sauce

½ teaspoon mustard paste

Salad oil to taste


Directions

1. Poke several holes in the chicken thighs with a fork and sprinkle with salt and pepper.

2. Mix together mayonnaise, mirin, soy sauce, and mustard paste.

3. Heat salad oil in a frying pan and cook the chicken thighs, skin-side down.

4. Once golden brown, flip them over and cook over low-medium heat until cooked through.

*Cook for 7-8 minutes on both sides to thoroughly cook through. Covering the chicken with a lid will reduce the crispness, so it's recommended to cook without a lid.

5. Wipe off any excess oil, add the mixed seasonings, and simmer gently to combine.

Add the seasonings around the skin without pouring them on it, and toss the skin lightly at the end to make it crispy.

Crispy skin! A juicy and satisfying dish is ready.
