Ingredients (Serves 2)
Okra: 3 pods | Salt: 1/2 tsp
Soft-boiled eggs (onsen tamago): 2
<Seasoned Dashi Broth>
Dashi stock: 400 ml
Soy sauce: 1 1/2 tsp
Mirin: 1/2 tsp
Salt: A pinch
[Preparation]
Place the okra on a cutting board, sprinkle with salt, and lightly roll them with your palm to remove the fine fuzz (a process called *itazuri*). Rinse with water, trim off the stem ends (calyxes), and slice into rounds.
[Instructions]
1. Combine the <Seasoned Dashi Broth> ingredients and the okra in a pot. Bring to a boil, then turn off the heat and let it cool. Once cooled, chill in the refrigerator.
2. Crack the soft-boiled eggs into serving bowls and pour the mixture from step (1) over them.
