Corn and Dried Baby Sardine Fried Rice

 


【Ingredients】

Corn... 1 ear

Unroasted (light) sesame oil... 1 1/2 tbsp

Dried baby sardines (*jako*)... 40g

Sake & Black vinegar... 1 tbsp each

Cooked rice... 400g

Coarse salt... 1/4 tsp

Soy sauce... 1/2 tbsp

Sesame oil... 1/2 tsp

Coarsely ground black pepper... A small amount

Shiso leaves... 10 leaves


【Instructions】


【1】 Cut along the cob with a knife to remove the corn kernels.


【2】 Place the unroasted sesame oil and dried baby sardines in a frying pan over medium heat and sauté, ensuring the oil coats the sardines. Once fragrant, add the sake and black vinegar, and sauté until the liquid has evaporated.


【3】 Add the corn from step 【1】 and sauté briefly.


【4】 Add the rice and sprinkle with coarse salt; sauté slowly over low heat until the moisture evaporates and the rice grains separate and become fluffy. Drizzle the soy sauce around the edge of the pan, season with the sesame oil and coarsely ground black pepper, and mix in the finely chopped shiso leaves.
