Stir-fried Chicken Breast with Oyster Sauce

【Ingredients】 (Serves 2)

Chicken breast: 1 piece

Sake: 1 tbsp

Salt: to taste

Potato starch: as needed

Salad oil: 1.5 tbsp

White part of a long onion (negi): 1 stalk

Garlic chives (nira): 1/2 bunch

Sake: 1 tbsp

Mirin: 2 tsp

Sugar: 2 tsp

Soy sauce: 2 tsp

Oyster sauce: 2 tsp

Sesame oil: a splash

【Preparation】

1. Slice the chicken breast diagonally into 1cm-thick pieces and pound them lightly with a rolling pin to flatten. Cut into bite-sized pieces and coat them in a bowl containing the mixed "seasoning base" ingredients.

If you have a meat mallet, please use it.

2. Thinly slice the white onion diagonally. Trim the root ends off the garlic chives and cut them into 3cm lengths. Mix together the "sauce ingredients."

【Instructions】

1. Lightly coat the chicken pieces with potato starch. Heat 1 tablespoon of salad oil in a frying pan over medium heat, cook the chicken until browned on both sides, then remove from the pan.

2. Wipe any residue from the pan with a paper towel, heat the remaining 1/2 tablespoon of salad oil, and sauté the white onion until softened.

3. Return the chicken to the pan, add the garlic chives and the mixed sauce ingredients, stir-fry everything together, and serve on a plate.
