Ingredients
1/2 bitter melon
1/2 teaspoon salt
1 can tuna (80g)
80g pizza cheese
4 eggs
A pinch of salt and pepper
1/2 tablespoon salad oil
Ketchup to taste
Preparation
De-seed the bitter melon, thinly slice it, and toss with salt. Once it has released its liquid and softened, rinse it quickly and squeeze out the excess water.
- Lightly drain the tuna.
[Directions]
1. Beat the eggs in a bowl, add the bitter melon and tuna, and mix. Season with salt and pepper.
2. Heat salad oil in a small frying pan. Pour in half of the egg mixture from (1) and mix in large circular motions with a spatula. Once the eggs are slightly soft and half-cooked, sprinkle with pizza cheese and pour in the remaining egg mixture.
3. Cover the frying pan and cook over low heat until the eggs are no longer raw and are almost set. Flip the eggs and cook over low heat for 3-4 minutes until lightly browned. Cut into bite-sized pieces, place on a serving dish, and drizzle with ketchup.
