Ingredients:
Chicken breast (brought to room temperature) 1 piece (300g)
Sugar 1 teaspoon
Salt 1 teaspoon
Sake 1 tablespoon
Vegetable oil 1 tablespoon
Sake 2 tablespoons
Mirin 2 tablespoons
Soy sauce 3 tablespoons
Grated garlic 1 teaspoon
Coarsely ground black pepper a pinch
Parsley (for garnish) as needed
Instructions:
1. Pierce the skin side of the chicken breast in several places with a fork. Flip it over and flatten the thickness evenly by tapping it with the back of a knife.
2. Sprinkle with sugar, salt, and sake, rub it in, and let it sit for 30 minutes.
3. Wipe off any excess moisture from the chicken with a paper towel and sprinkle with coarsely ground black pepper.
4. Heat vegetable oil in a frying pan over high heat, and cook the chicken skin-side down for about 1 minute. Once browned, flip it over, cover, and cook over low heat for 10 minutes. Once the chicken is cooked through, remove it from the pan and set aside.
5. In the same frying pan, add sake, mirin, soy sauce, and grated garlic and simmer briefly. Return the chicken to the pan and coat it with the sauce.
6. Serve on a plate, sprinkle with parsley, and it's ready!
