Sweet potato and broccoli salad with small sardines

 


Ingredients

1 sweet potato

1/2 broccoli

A pinch of salt

40g dried small sardines

A [10g shio-konbu (coarsely chopped)

2 tablespoons olive oil

1 tablespoon vinegar

1 teaspoon light soy sauce]


[Directions]

(1) Divide the broccoli into small florets and boil in salted water until firm. Drain and coarsely chop.


(2) Wash the sweet potato thoroughly, cut it into bite-sized pieces with the skin on, and boil in salted water. Once soft, drain, sear, remove excess water, and dust with flour.


(3) Combine (1), (2), dried small sardines, and A in a bowl and mix well.
