Ingredients (for one 15cm × 15cm square baking pan)
・1 apple (Kogyoku/Jonathan variety recommended)
・2 eggs
・50g sugar
・50g olive oil
・100g plain yogurt
・150g cake flour (low-protein flour)
・1 tsp baking powder
・A pinch of cinnamon sugar
・A pinch of powdered sugar
How to make
[Preparation] Line a square baking pan with parchment paper. Preheat the oven to 170°C (338°F).
① Crack the eggs into a bowl, then add the sugar, olive oil, and yogurt. Mix well.
② Sift in the cake flour and baking powder. Mix using a cutting motion (folding/stirring gently) until no traces of dry flour remain.
③ Cut the apple—peel and all—into quarter-rounds (thin, fan-shaped slices). Add them to the batter from step ② and mix in roughly.
④ Pour the batter into the prepared pan, sprinkle the surface with cinnamon sugar, and bake in the preheated oven for about 30 minutes. *Please adjust the temperature and baking time according to your specific oven.*
⑤ Once baked, place the cake on a wire rack to cool. Dust with powdered sugar, cut into serving-sized pieces, and it’s ready to enjoy!
