Myoga (Japanese ginger) tempura

Ingredients (serves 2)

・8 myoga (Japanese ginger buds)

・All-purpose flour, water, frying oil, and salt (as needed)

Instructions

・Thinly slice 4 of the myoga buds lengthwise.

・Place the sliced myoga in a bowl. Add 1 tablespoon of flour and mix; repeat this process 3–4 times, allowing the flour to absorb the moisture released by the myoga.

・Prepare a batter by combining 4 tablespoons of all-purpose flour with a little over 3 tablespoons of water.

・Heat the frying oil in a pot to 170°C (338°F). Gather the prepared myoga (from the previous step) into bite-sized portions and deep-fry them. Dip the remaining 4 whole myoga buds into the batter and deep-fry them as well.

・Drain off the excess oil, arrange on a serving plate, and serve with salt on the side.
