Ice stew

 


Ingredients (serves 2):


1 potato (cut into bite-sized pieces)


1/2 carrot (cut into bite-sized pieces)


15g butter


1/2 onion (thinly sliced)


150g chicken thighs (cut into bite-sized pieces)


150ml water


2 teaspoons consommé stock


50g broccoli (separated into florets)


100ml vanilla ice cream


40g pizza cheese


Preparation:


Place the potatoes and carrots in a heat-resistant bowl, cover with plastic wrap, and microwave at 600W for 3 minutes.


Directions:


1. Add the butter and onion to a pot and sauté over medium heat until the onion is translucent. Add the potatoes, carrots, and chicken thighs and continue sautéing.


2. Once the meat has started to change color, add water and consommé soup base, cover, and simmer for 5 minutes. Remove the lid, add the broccoli, and simmer for a further 5 minutes.


3. Reduce the heat to low, add the vanilla ice cream and pizza cheese, and mix. Season with salt and pepper (not included in the recipe, to taste) and it's done!
