Ingredients (Serves 2):
200g potatoes (shredded)
1/4 teaspoon salt
[A] 150g ground chicken breast
[A] 1 tablespoon potato starch
[A] 1 teaspoon mayonnaise
2 tablespoons vegetable oil
Directions:
1. Sprinkle salt on the potatoes and drain them once they are soft. Combine the potatoes and [A] in a bowl and mix.
2. Heat vegetable oil in a frying pan over medium heat. Arrange the potatoes in bite-sized pieces and cook on both sides until crispy. Garnish with parsley to taste and you're done!
