Onion pie
Ingredients (serves 4)
1 sheet of pie crust (I used Bellamy's square pie crust this time)
1 small onion
3 slices of bacon
50g pizza cheese
Mayonnaise (as needed)
Parsley (as needed)
How to make
1) Slice the onion in half lengthwise and cut the bacon into strips just under 1cm long. Take the pie crust out of the freezer and leave it at room temperature (*). Preheat the oven to 200 degrees.
*Remove the pie crust from the freezer 5 minutes before using it to soften it a little, which will make it easier to use. If it has softened too much after leaving it for a long time, put it back in the freezer and let it harden before trying again.
2) Roll out the pie crust with a rolling pin or something similar to make it a little larger. Place 2/3 of the onion, 2/3 of the bacon, and pizza cheese on top and roll it up from the edge. Once it is cylindrical, lightly squeeze it with your hand to shape it, and cut it into 4 equal parts with a knife.
3) Place (2) cut-side up on a baking sheet lined with parchment paper, leaving some space between each piece. Lightly mash the pieces with your hands, top with mayonnaise and the remaining onion and cheese, and bake in a 200°C oven for 20 minutes. Finish by sprinkling parsley on top.
