Ingredients
・Chicken thigh: 1/2 piece (approx. 150g)
・Salt: to taste
・Pepper: to taste
・Potato starch: 1/2 tbsp
・Garlic chives: 1/2 bunch (approx. 50g)
・Eggs: 2
・Vegetable oil: to taste
・Water: 50ml
・Sake: 1 tbsp
・Soy sauce: 2 tsp
・Mirin: 2 tsp
・Oyster sauce: 1 tsp
・Potato starch: 1/2 tsp
・Sesame oil: to taste
Preparation
Combine the water, sake, soy sauce, mirin, oyster sauce, and potato starch in a bowl.
Instructions
1. Cut the chicken thigh into bite-sized pieces and rub in the salt, pepper, and potato starch. Cut the garlic chives into 4cm lengths.
2. Heat vegetable oil in a frying pan, pour in the beaten eggs, and remove them from the pan once they are soft-set (runny).
3. Heat sesame oil in the same pan over medium heat and cook the chicken thigh. Once browned, flip the chicken over, cover with a lid, and cook over low heat for about 3 minutes until cooked through.
4. Add the garlic chives, eggs, and the combined seasoning mixture; toss everything together until the sauce thickens and coats the ingredients.
