Sweet and sour stir-fried chicken and eggplant

 




[Ingredients (for 2 servings)]


Chicken thigh (for karaage)...300g

Eggplant...2

Potato starch...2 tablespoons

A Soy sauce...2 tablespoons

A Sake...2 tablespoons

A Vinegar...2 tablespoons

A Sugar...2 tablespoons

Sesame oil...2 tablespoons


[Instructions]


 ① Cut the eggplant into bite-sized pieces.

② Put the chicken, ①, and potato starch into a plastic bag and massage to coat the eggplant evenly. ③ Heat the sesame oil in a frying pan over medium heat, arrange ② in the pan and cook for 2-3 minutes. Once browned, flip, reduce the heat slightly, cover, and steam-fry for about 5 minutes.

④ Once cooked through, add A and stir-fry. Sprinkle with white sesame seeds if desired.
