Stir-fried Chicken and Okra with Garlic Butter and Soy Sauce

 


【Ingredients】 (Serves 2)


Chicken thigh: 1 piece


Potato starch: 1 tbsp


Okra: 8 pods


Garlic: 1 clove


Vegetable oil: 2 tsp


Sake: 1 tbsp


Sugar: 1 tbsp


Soy sauce: 2 tbsp


Butter: 1 tbsp


【Preparation】


1. Roll the okra on a cutting board with your palm while sprinkling with salt (salt amount not listed in ingredients) to rub the surface; rinse off the salt, trim off the stem ends, and cut diagonally in half.

2. Cut the chicken thigh into bite-sized pieces and coat with potato starch. Thinly slice the garlic. Mix together the ingredients for the <combined seasoning>.


【Instructions】


1. Place the vegetable oil and garlic in a frying pan over low heat; once the garlic becomes fragrant, remove it from the pan and set aside.


2. Increase the heat to medium and cook the potato starch-coated chicken until browned. Add the okra and stir-fry briefly, then return the garlic to the pan.


Removing the rendered fat from the chicken with a paper towel helps achieve a crispy finish.

3. Add the <combined seasoning> to the pan. Once the sauce thickens, add the butter and stir briefly, then turn off the heat and serve.
