Tuna potato salad

 



Ingredients (for 2 servings):

Cucumber 1/2

Potatoes 2

[A] Lemon juice 1 tsp

[A] Sugar 1/3 tsp

Canned tuna in oil (lightly drained) 1 can

Mayonnaise 3-4 tbsp

Salt a pinch

Black pepper to taste


Instructions:


① Slice the cucumber thinly, rub with a little salt (not included in the ingredients list), let sit for about 5 minutes, then squeeze out the excess water.


② Place the well-washed potatoes (with skin on) in a heatproof bowl, cover with plastic wrap, and heat in a 600W microwave for about 5 minutes, or until a skewer can easily pierce them. Peel the potatoes while still hot and roughly mash them with a fork. *Be careful not to burn yourself.


③ Add [A] to ② and mix well.


④ Once ③ has cooled slightly, add ①, canned tuna in oil, and mayonnaise, and mix well. Finally, season with salt and black pepper, and it's done!
