<Ingredients (Serves 2)>
New potatoes: 5–6 (300g)
Potato starch: 1.5 tbsp
Vegetable oil: 4 tbsp
Salt: 2 pinches
Coarsely ground black pepper: A dash
<Instructions>
1. Scrub the new potatoes lightly (e.g., with a brush) to clean them and remove any eyes. Cut them in half, leaving the skins on.
2. Place in a heat-resistant bowl, cover loosely with plastic wrap, and microwave at 600W for about 4–5 minutes, or until a skewer passes through easily.
3. Drain off any excess moisture and coat the potatoes thoroughly with potato starch.
4. Arrange the potatoes in a frying pan with the cut sides facing down, then flatten them using the bottom of a glass.
5. Pour in the vegetable oil and turn on the heat. Pan-fry over medium heat for about 6–8 minutes until golden brown, then cook the other side in the same way. Sprinkle with salt and coarsely ground black pepper to finish.
