Microwave-cooked, gooey eggplant

 



Ingredients (for 2 servings):

2-3 eggplants

[A] 2 tablespoons soy sauce

[A] 2 tablespoons vinegar

[A] 1 tablespoon sugar

[A] 1 tablespoon sesame oil

[A] Toasted white sesame seeds (to taste)

[A] Sliced ​​chili peppers (to taste)


Instructions:

① Remove the stems from the eggplants and peel them. Briefly rinse them in water, then wrap them in plastic wrap and heat in a 600W microwave for 3 minutes.

② Prepare a bowl of ice water and place the wrapped eggplants from ① into the ice water to cool thoroughly.

③ Combine ingredients [A] in a storage container and mix well.

④ Add the eggplants from ② to the container, tearing them by hand. Mix well, and it's ready!
