Ingredients (Serves 2)
2 chicken tenderloins
2 tsp sake
1/4 head of broccoli
<Sesame-Vinegar Dressing>
2 tbsp ground white sesame seeds
1.5 tbsp prepared sweet vinegar sauce (recipe here)
2 tsp soy sauce
Preparation
Cut the chicken tenderloins into thirds crosswise. Place them in a microwave-safe dish, sprinkle with sake, cover with plastic wrap, and microwave for 2–3 minutes. Once cooled slightly, shred the meat into thin strips. (Note: Microwave wattage used is 600W.)
Cut the broccoli into florets, place in a microwave-safe dish, cover with plastic wrap, and microwave for 1 to 1 minute 30 seconds. Transfer to cold water, then drain well once cooled slightly.
Mix the <Sesame-Vinegar Dressing> ingredients together in a bowl.
Instructions
1. Add the chicken tenderloins and broccoli to the bowl with the <Sesame-Vinegar Dressing>, toss to combine, and serve in a dish.
