Deli-style pumpkin salad

 


Ingredients

・ Pumpkin: 1/4 of a whole pumpkin


・ Onion: 1/8 of an onion


・ Red cabbage: 1–2 leaves (30g)


・ Sausages (wiener type): 4


・ Raisins: 2 tablespoons


・ Chopped parsley (fresh): 1 tablespoon


・ Salad oil: 1 tablespoon


・ Green leaf lettuce: 1 leaf


・ Mayonnaise: 4 tablespoons


・ Dressing of your choice: 1 tablespoon


■① Microwave the pumpkin

Cut the pumpkin into roughly 3cm cubes, place them in a microwave-safe container, drizzle with 1 tablespoon of water (not included in the ingredient list), and microwave at 600W for 5 minutes. Once done, let it cool slightly.


■② Slice the onion

Thinly slice the onion using a slicer, soak in water for 5 minutes, then squeeze well to remove excess moisture.


■③ Cut the cabbage

Cut the red cabbage into 3cm squares, soak in water for 5 minutes, and drain well.


■④ Sauté the sausages

Cut the sausages into 1cm-wide rounds. Heat the salad oil in a frying pan and sauté the sausages until browned.


■⑤ Mix all ingredients together

Combine the prepared pumpkin, onion, cabbage, and sausages with the raisins, mayonnaise, and your chosen dressing. Line a plate with the green leaf lettuce, arrange the salad on top, sprinkle with parsley, and it's ready to serve!
