Mackerel curry

 


[Ingredients for 2 servings]


・Canned Mackerel (in water) 1 can (120-130g)


・Onion 1


・Salad oil 2 tablespoons


・Garlic (minced) 1 clove


・Ginger (minced) 1 clove


・Red chili pepper 1


・Curry powder 2 teaspoons


・Canned chopped tomatoes 200g


・Salt 1/2 teaspoon


・Pepper a pinch


・Soft-boiled egg (optional)


・Green onions (chopped) (optional)


<For seasoning>


・Pickled plums (honey-pickled plums) 2


・Fresh cream 50ml


・Worcestershire sauce 1/2 tablespoon


・Ginger (grated) 1 tablespoon


[Preparation]


・Remove the pits from the honey-pickled plums and mash them. Tear the red chili pepper in half and remove the seeds.


Honey-pickled plums are used as a substitute for tamarind paste, which is often used in Indian cuisine. It adds richness to the flavor.


• Roughly chop the onion and place it in a heatproof container. Add 1 tablespoon of salad oil, cover with plastic wrap, and heat in a 600W microwave for 4-5 minutes.


[Instructions]


1. Heat 1 tablespoon of salad oil in a deep frying pan over low heat, then add the garlic, ginger, and red chili pepper.

2. Add the curry powder and stir over low heat until fragrant.


Be careful not to burn it. Stir slowly.

3. Add the onions cooked in the microwave, the drained canned mackerel, and the canned diced tomatoes. Sauté over medium heat for about 5 minutes, breaking up the mackerel and allowing the moisture to evaporate.

4. Add the ingredients for seasoning and sauté for another 5 minutes. Once the mixture has thickened, season with salt and pepper to taste.


Honeyed plums, fresh cream, and Worcestershire sauce are recommended as they easily add richness!


5. Serve on a plate and top with a soft-boiled egg or chopped green onions if desired.
