[Ingredients (Serves 1-2)]
1 chicken breast (350g)
1 1/2 teaspoons oil (rice bran oil, etc.)
<Marinating Sauce> [2 tablespoons liquid shio-koji, 1 teaspoon lemon juice, 1 teaspoon sesame oil, 1/2 teaspoon sugar, 6 sprinkles garlic powder, coarsely ground black pepper to taste]
<Finishing> Lemon (sliced into wedges) to taste
[Directions]
(1) Cut the chicken into small bite-sized pieces. Marinate in the marinating sauce for about 30 minutes. Add oil to a frying pan and heat over medium heat. Drain the chicken and add it to the pan.
(2) Stir vigorously and fry until browned all over. Since the chicken burns easily, reduce the heat slightly if it starts to darken too quickly.
(3) Add any remaining marinating sauce and stir, then fry until glossy and turn off the heat. Serve in a serving dish and garnish with lemon. Shake the frying pan to coat the meat evenly, until it becomes shiny.
