Chicken breast garlic steak - tender and juicy

Ingredients:

1 chicken breast (300g) (room temperature)

1 teaspoon sugar

1 teaspoon salt

1 tablespoon sake

1 tablespoon salad oil

2 tablespoons sake

2 tablespoons mirin

3 tablespoons soy sauce

1 teaspoon grated garlic

A pinch of coarse-ground pepper

Parsley, to taste

Directions:

1. Poke several holes in the skin of the chicken with a fork. Turn it over and pound it with the back of a knife to make it evenly thick.

2. Sprinkle with sugar, salt, and sake, rub in, and let sit for 30 minutes.

3. Wipe off excess moisture from the chicken with kitchen paper and sprinkle with coarse-ground pepper.

4. Add salad oil to a frying pan and heat over high heat. Cook the chicken skin-side down for about 1 minute. Once browned, flip, cover and cook over low heat for 10 minutes. Once the chicken is cooked through, remove to a plate.

5. Add sake, mirin, soy sauce and grated garlic to the frying pan (4) and simmer lightly, then add the chicken back in and simmer until combined.

6. Place on a plate, sprinkle with parsley and it's done!
