Ingredients:
2 potatoes
10g butter
1/3 teaspoon salt
Pepper to taste
1 teaspoon vegetable oil
1 egg
Directions:
1. Wash the potatoes and wrap each one in plastic wrap. Place on a heat-resistant plate and microwave at 600W for about 7 minutes. Once cooled, peel and cut into 1cm pieces.
2. Heat butter in a frying pan over medium heat and arrange the potatoes in the frying pan. Sprinkle with salt and pepper and cook until golden brown on both sides, then transfer to a plate.
3. Wipe the frying pan clean, add vegetable oil, and heat over medium heat. Crack the egg into the frying pan and cook until cooked to your desired doneness. Place the egg on top of the potatoes and you're done!
Serve with chopped parsley, if desired!
