Ingredients (Serves 2)
1 chicken thigh (300g)
1 green onion (including green parts) (80g)
1/2 tomato (90g)
1 clove garlic
Oil (for chicken)...to taste
1 tablespoon sesame oil (for vegetables)
Salt and pepper...to taste
Coarsely ground sweet chili pepper...to taste (optional)

1 teaspoon mirin
1 teaspoon soy sauce
1 teaspoon vinegar
1 teaspoon miso
1 teaspoon honey
1 tablespoon mild Korean chili powder
Directions
1. Finely chop the green onion, tomato, and garlic. Set aside a handful of the white parts of the chopped green onion for topping.
2. Lightly season the chicken with salt and pepper to season. Place the chicken skin-side down in a heated frying pan and cook over medium heat. Once the skin is crispy, flip it over and cook the other side. Once the chicken is cooked through, serve on a plate.
3. Heat sesame oil in a frying pan and sauté the green onion and garlic. Once the green onion has softened, add the tomatoes and continue to sauté. Once the tomatoes are cooked through, add the A mixture and sauté over low-medium heat until it becomes a paste, and mix well.
4. Pour 3 over the chicken and finish by sprinkling the green onion set aside from 1 and coarsely ground sweet chili pepper to taste.
