Potato Galette with Corn and Cheese

 


Ingredients (serves 2–3):

Potatoes: 500g


[A] Potato starch: 2 tbsp


[A] Salt: 1/4 tsp


[A] Pepper: to taste


Whole kernel corn: 30g


Pizza cheese (shredded cheese): 40g


Vegetable oil: 2 tsp




Instructions:

① Peel the potatoes, cut them into bite-sized pieces, and place them in a heat-resistant bowl. Cover loosely with plastic wrap and microwave at 600W for 5–6 minutes until soft.

② While still hot, mash the potatoes with a fork until smooth, then add ingredients [A] and mix well.


③ Divide the mixture from step ② into two equal portions and flatten each one. Place the corn and pizza cheese on one portion, then place the other portion on top and seal the edges firmly.


④ Heat the vegetable oil in a frying pan over medium heat and add the potato patty from step ③. Cook until both sides are golden brown, and it's ready!




Sprinkle with dried parsley before serving, if desired.
